Homemade Mac & Cheese

I love macaroni and cheese. It is one of my favorite comfort foods, and in this house, we are all about comfort foods. The best part of making this simple dish is that the boys love it. Always have!

This recipe was adapted from my Mom – she makes a mean mac & cheese and we ask for it when we visit. With a few simple ingredients you can make this wonderful homemade mac & cheese.

What you will need:

  • 1 box dry macaroni
  • 2 tsp. salt
  • water
  • 4 Tbsp. butter
  • 1 medium onion; chopped
  • 5 Tbsp. flour
  • 2 cups milk
  • 3 cups of grated cheese*
  • 1/4 tsp. pepper
  • 2 cups cooked ham; diced
  • 1 tsp. Franks Hot Sauce

In a large pot, bring water and salt to a boil. Cook macaroni until al dente. You do not want to over cook it as it will be going into the oven. Drain and set aside.

In a medium sized sauce pan, melt better. Once melted add flour and stir over medium heat for about 5 minutes. DO NOT BURN.

Slowly add a cup of milk, and then add 1/2 of the cheese. Continue mixing until the cheese melts into the milk and flour mixture. Add the remaining cheese, milk and pepper. You may add more milk if it’s too thick.

Add in your onions & hot sauce and cook for another 5 minutes. Stirring constantly

Add your macaroni back to the pot you cooked it in. Add in the ham and stir.

Once your cheese sauce is done, combine everything into the pot and reheat.

Preheat your oven to 350°

Add your macaroni mixture to a large 9 x 13 pan and cook covered for 30 minutes or until golden and bubbly.

Notes

You can add seasoned bread crumbs to the top - also you do not have to bake it if you wish not to.
