Baked Chicken Taquitos

I will be totally honest and say, I only ever ate store bought taquitos before I came up with this recipe. And by store bought, I mean the ones from 7-11 that had probably been sitting there for 8+ hours. I didn’t care, it was usually for a somewhat drunken walk home. But that was way before kids came into the picture. Now I make them at home… not drunk.

I was getting board of tacos, so instead of using ground beef, I cut up some chicken breasts, added some veggies and a pack of taco seasoning (I still need to come up with a homemade seasoning) and rolled em up and baked them.

The verdict in this house?

Everyone loved them, so they stayed on the menu.

They really are easy to make, and are perfect for a somewhat quick dinner. If you make the filling ahead of time all you have to do is add cheese, roll them in a flour tortilla and bake them. Ta Da!

What you will need: This makes approx. 12 small taquitos

  • 10 – 12 small soft flour tortillas
  • 3 large chicken breasts; cubed
  • 1/2 cup frozen corn
  • 1 bell pepper; diced *Any color will do
  • 1 medium onion; chopped
  • 1 pack of taco season
  • 2/3 cups water
  • 1 cup grated cheddar cheese
  • sour cream for serving

Brown cubed chicken in a large skillet. Once browned add onion, corn and peppers.

Add in taco seasoning and water and cook down until the water mostly gone (more like makes a sauce) and the chicken is cooked through. *If you are using homemade seasoning, I think you can omit the water*

Pre heat oven to 350°

Add 2 or 3 Tbsp. of the chicken mixture to a small flour tortilla.

Add some cheese and roll into a cigar.

Place seam side down on a large baking sheet.

Repeat until all the mixture is gone, or until you have the appropriate amount of servings.

Bake at 350° for 10 minutes or so, or until the flour tortilla’s are crisp & lightly golden brown.

Serve with salsa, sour cream and hot sauce if you like.

You could totally make up a bunch of these and cut them in half to serve as appetizers. In fact I will probably be serving these at our annual Christmas eve party! The filling can be made in advanced making it super simple to throw these together.
