Panko Crusted Parmesan Zucchini Rounds

Zucchini is one of those vegetables that I love to cook and bake with. You can bake it into a loaf, like I did with my Raisin Zucchini bread, or into muffins, or you can make these little golden rounds of deliciousness.

I had a couple of yellow zucchini’s in the fridge and they were ready to either be used up or tossed out, so I cut them up, dredge them and did what I do best – fried em’ up! I decided to spice them up a little, and added some Parmesan cheese, as well as some chipotle sea salt. Can I just say, how much I loved these!! I loved them more than the traditional cut zucchini sticks.

Careful though, they are addicting!

Panko Crusted Parmesan Zucchini Rounds

What you will need:

  • 1 large yellow zucchini; cut into 1/4 inch rounds
  • 1/2 cup flour
  • 1 tsp. pepper
  • 2 eggs
  • 1 cup panko bread crumbs
  • 1/4 cup Parmesan cheese
  • 1/2 tsp. chipotle sea salt (or any salt)
  • oil for frying

Lay out three shallow bowls (or tin pie plates) add flour and pepper to first dish. Give it a stir.

Add eggs to second pan and beat until light and fluffy. Add panko breading to third dish, add Parmesan cheese and salt. Give it a stir.

Heat oil over medium heat

Dredge rounds into the flour, dip into the egg wash making sure to coat the whole zucchini round, and then dredge into the panko breading. Working in small batches, place coated round into the hot oil and fry until golden brown. About 2-3 minutes.

Once cooked, remove from oil and place on paper towel to remove excess oil.

Repeat until all the zucchini rounds are done.

Serve with dipping sauce of choice!

Believe me when I say, these little rounds are so tasty, and totally addicting! They pack big crunch, but are not heavy. Paired with a little dipping sauce, these are my go to snack item when I am craving something fried!
