Chicken Satay with Peanut Dipping Sauce

I don’t recall the first time I had chicken satay, but the last time I had it, it was awesome!

Tender pieces of chicken breast marinaded in a lime, soy and ginger sauce and then BBQ’s to perfection. Served with a peanut dipping sauce – yeah the boys were all over this dinner.

First off, the boys loved that these were served on a skewer. They have been super picky as of late, so it was nice to see them eat dinner. Secondly, James said he loved the flavor – and Graham was all about the peanut sauce. These were a big hit!

Chicken Satay

What you will need:

  • 4 large boneless, skinless chicken breasts; sliced lengthwise
  • 5 Tbsp. soy sauce
  • 5 cloves garlic; minced
  • 1/2 tsp. red pepper flake
  • 4 tsp. fresh ground ginger
  • 2 Tbsp. fresh lime juice
  • 2 Tbsp. brown sugar
  • Bamboo skewers; soaked in water

Place sliced chicken in a large plastic zip lock bag, or bowl.

Combine all the other ingredients together and mix well. Pour the marinade in with the chicken. Seal tight and place in the fridge for at least 1 hour.

When you are ready to cook, thread a couple of chicken tenders onto a bamboo skewer. Do this with all the chicken.

Heat your BBQ to 400° and grill until chicken is cooked through.

Serve with peanut dipping sauce and your favorite side dish or coconut rice.

Peanut Dipping Sauce:

  • 1 Tbsp. brown sugar
  • 1 1/2 Tbsp. soy sauce
  • 2 cloves of garlic; minced
  • 1/4 tsp. red pepper flake
  • zest of 1 lime
  • 2 1/2 Tbsp. smooth or crunchy peanut butter

Mix everything together and serve with chicken satay

We all agreed that the chicken itself was amazing. The peanut sauce was super flavorful, but I don’t think I will need to serve it all the time.

I found these to be simple to make, they had great flavour and would be great to serve as an appetizer at a holiday party.
