Chicken Bacon Ranch Quesadillas

These chicken bacon ranch quesadillas were a total fluke – I had an idea, and ran with it, but I never thought they would turn out this good.

Soft flour tortillas stuffed with seasoned chicken breast, crisp bacon, smoked Gouda and baby spinach. These chicken bacon ranch quesadilla are a great mid week dinner that even your pickiest eaters will enjoy.

Ready to serve in under 30 minutes!

Chicken Bacon Ranch Quesadillas

What you will need: Makes 4

  • 3 boneless, skinless chicken breast; cubed
  • 4 slices of bacon; diced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. ranch dressing mix (powder)
  • 4 cup shredded Gouda cheese
  • 2 cups baby spinach
  • flour tortillas

In a large skillet over medium heat, cook bacon until crisp. Remove and set aside.

Over medium heat, cook cubed chicken in leftover bacon fat, and season with ranch mix, salt and pepper. Continue to cook until the chicken is cooked all the way through. Remove from pan, set aside.

Heat oven to 400°F

To create the quesadilla, place tortillas on a baking sheet, place 1/4 cup of cheese on each tortilla. Followed by a small handful of baby spinach. Top that with bacon and chicken. Followed by another payer of cheese. Place a second tortilla on top.

Bake in the oven for about 10 minutes or until the cheese is melty and everything is heated through.

Serve with fresh ranch dressing.
