One Pan Roasted Chicken Dinner

I’ve been wanting to try a one pan roasted chicken dinner for a while now, but it was only recently that I went for it. There were a couple of big hits and a minor miss.

The hits: Baby red potatoes, seasoned to perfection. Tender with a little crisp. I added some hot sauce to jazz them up. The chicken itself is basic seasonings, but it’s juicy, and the skin is baked to a golden crisp. I couldn’t stop nibbling.

The miss: Overcooked green beans. My only option to say is add the beans half way through the cooking time to ensure that they don’t get overcooked. I didn’t mind the crispness of them, but that’s just me.

Chris and I loved this meal – it was so simple to toss together, and only using a single pan made clean up a breeze. A one pan roasted chicken dinner – perfect for Sunday’s best.

One Pan Chicken Dinner

What you will need: Serves 4

  • 3 cups baby red potatoes; cut in half then quartered
  • 3 Tbsp. oil
  • 1 Tbsp. hot sauce
  • salt & pepper to taste
  • 1 tsp. roasted red pepper seasoning
  • 3 pieces of chicken; I used the thigh and leg portions, but you could use half chickens as well
  • 1 Tbsp. oil
  • 1/2 tsp. dried thyme
  • 1/2 tsp. seasoning salt
  • 1/2 tsp. pepper
  • 1/2 tsp roasted red pepper seasoning
  • 1 lbs fresh green beans; washed and trimmed
  • 2 Tbsp. butter
  • 3 cloves minced garlic

Double line a large baking sheet with tin foil and preheat your oven to 425°F

In a bowl toss the potatoes, oil, hot sauce, salt & pepper and roasted red pepper seasoning together. Coat well and add to 1/3 of the baking sheet.

Place chicken pieces in the middle of the sheet and divide oil among the pieces. Season with dried thyme, seasoning salt, pepper and red pepper seasoning.

Bake in the oven for 30 minutes.

After 30 minutes remove baking sheet and add the green beans to the last 1/3 of the pan. Dot butter and add garlic.

Continue to cook in oven until the chicken reaches an internal temperature of 170°F. No pink and golden crisp skin.

Serve and enjoy.
