French Leek Soup with Swiss Cheese Crouton

While flipping through the latest issue of Canadian Living, I came across a recipe for a Swiss-French Leek Soup (pg. 18). I was drooling!

You know me – I see a recipe that makes my mouth water, and I am jumping right in to make it. I headed off to pick up a the basic ingredients I would need; like leeks and beef broth. I came home and had to make it.

While I stayed pretty true to the recipe, I did add more garlic because.. well it’s garlic. I also added some red wine to the soup as well. I found that it gave it a bit more body and flavour – more true to a classic French Onion Soup.

Both Chris and I loved it – I really like the subtle flavour of the leeks, paired with the Thyme and broth. It was delicious.

French Leek Soup

What you will need:

  • 2 Tbsp. butter
  • 3 large leeks; rinsed and sliced
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • 3 cloves garlic; minced
  • 2 Tbsp. balsamic vinegar
  • 4 cups beef broth
  • 2 sprigs of fresh Thyme
  • 1/4 cup red wine
  • 4 large or 8 small sliced of French bread
  • 3/4 cup fresh grated Swiss cheese

Over medium heat, melt butter in a medium size pot (I use a 3 qt. cast iron dish), add leeks, as well as a salt and pepper and cook down for about 10 minutes.

Add in garlic and cook for an additional couple of minutes.

Mix in balsamic vinegar, broth, red wine and Thyme.

Cover and bring to a boil.

Preheat oven to broil and get your soup bowls ready.

Divide the soup mixture between your bowls, top with a slice(s) of bread and cheese.

Broil in the oven until the cheese is melted and golden.

Serve and enjoy.
