My boys are big fans of granola bars, and these no bake cranberry granola bars are simple to whip up at home, and taste even better than the store bought ones. I personally love the tartness from the cranberries, and the sweetness from the oats and honey. I decided to add some dark chocolate chips just to make them a wee bit sweeter.
These cranberry granola bars require no baking, and are nut free, which means they are great to add to your child’s school lunch. James loved them so much he asks me to make them over and over. Most of these ingredients you probably already have on hand, but if you don’t, feel free to substitute ingredients.
What you will need:
- 2 cups quick cooking oats
- 1 cup crisp rice cereal
- 3/4 cup dried cranberries
- 1/3 cup butter
- 1/2 cup brown sugar
- 1/4 cup liquid honey
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1/2 cup dark chocolate chips
Line a brownie pan with parchment paper.
In a large bowl combine oats, rice cereal, cranberries and cinnamon. Stir and set aside.
Over medium heat, melt butter, sugar and honey together. Bring to a boil and cook for about 4 minutes. Remove from heat and stir in vanilla.
Combine the butter mixture with the dry ingredients and stir until everything is coated. Add in 1/4 cup of the chocolate chips and stir again.
Pour mixture into the prepared pan and top with remaining chocolate chips.
Cover with plastic wrap and place another brownie pan on top of the mixture. Weigh down with cans of soup and refridgerate over night.
Cut into squares and enjoy.
*Store in an airtight container in the fridge until use*
The kids loved these cranberry granola bars. I loved that there was no baking required, and you can customize these with your favorite ingredients. Toasted coconut would be amazing in these – and you could use raisins rather then the cranberries.
